April 20 – Pineapple Upside-Down Cake Day

Pineapple-upside-down-cake

A pineapple upside-down cake is made with the topping at the bottom of the cake and the batter poured over the top. The topping typically consists of canned or fresh pineapple rings and maraschino cherries in the center of the rings. After baking, the cake is turned upside-down onto a platter and served. The first Pineapple Upside-down cake recipe was likely found in a 1924 fundraising cookbook published in Seattle. However, the Dole company is credited for popularizing the cake during the 1940’s.

Read the wonderful book Eight Animals Bake A Cake which is beautifully illustrated. Then make your own pineapple upside-down cake. Kids will especially love placing the pineapple rings and the cherries inside the rings. For more fun, you can expand the day to include anything upside-down! Learn about bats, possums, etc., and you can also read the book Silly Sally who walks backwards and upside-down to meet different characters along the way.
