A pineapple upside-down cake is made with the topping at the bottom of the cake and the batter poured over the top. The topping typically consists of canned or fresh pineapple rings and maraschino cherries in the center of the rings. After baking, the cake is turned upside-down onto a platter and served. The first Pineapple Upside-down cake recipe was likely found in a 1924 fundraising cookbook published in Seattle. However, the Dole company is credited for popularizing the cake during the 1940’s.

How To Make: | |||
1. Preheat oven to 350 Fahrenheit. 2. In a 9″ x 13″ baking dish, arrange the eight pineapple rings on the bottom. 3. Put one cherry in the center of each ring. 4. Place the pecans around the edges of the rings. 5. Melt 1/4 cup butter in a small glass bowl for 30 seconds in the microwave. Stir in the brown sugar. Pour the mixture over the pineapple rings. Set dish aside. 6. In a medium bowl, prepare the cake batter. Then pour the mixture over the pineapple in the baking dish. Bake at 350 degrees for 35 to 40 minutes. Let the cake cool. Cut into pieces and flip them onto serving plates, or flip the entire cake over onto a serving platter and slice. |
